Today sweet invisible internet friend of mine we are making ourselves some secretly healthy, dark and delicious double chocolate macadamia mini muffins.

Until a few weeks ago I had never had myself a macadamia nut?!

Shocking right?!

I mean seriously, who am I?!

Never had a macadamia  . . .

Question – do you say macadamia nut or just macadamia? I feel kind of weird saying macadamia nut?!

I think I’ll just stick with calling it macadamia . . .

anyways . . . after trying my first ever macadamia I knew what had to be done . . .double chocolate macadamia mini muffins must be made!!

Let me tell you about these delicious little muffins –

They are dark, rich, and just perfectly sweet. Studded with delicious little chunks of antioxidant rich, dark chocolate chips and they are also bursting with blissful bites of buttery macadamias.

They are fudgey and rich without being overly sweet which I just love! What else . . .

These double chocolate macadamia mini muffins also happen to be super light and just melt in your mouth.

They also happen to be all natural, made with no refined flours or sugars, sweetened naturally with a little maple syrup and a splash of vanilla extract. The neutral, slight buttery flavour of our macadamias just go so perfectly with the subtle sweetness of the maple syrup and vanilla I can’t even tell you.

Ugh so, so good!

These decadent little muffins are packed with a double dose of antioxidants from the dark chocolate cacao and those delicious little chunks of dark chocolate chips and, because they are made with coconut flour they also happen to be low carb, grain free and paleo friendly. Love, love, love!!!!!!!!

Most importantly these little muffins are insanely delicious!

Super fudgey, melt in your mouth, double chocolate mini muffins that are studded with delicious little dark chocolate chips and simply studded with bites of buttery macadamia nut.  

All natural, secretly healthy, low carb, grain free and paleo friendly double chocolate macadamia mini muffins –  2 bites of dark and delicious double chocolate perfection.

Double Chocolate Macadamia Mini Muffins {Low Carb, Grain Free & Paleo Friendly}

Double Chocolate Macadamia Mini Muffins
{Low Carb, Grain Free & Paleo Friendly}

Makes approx 24 super fudgey, low carb, grain free, paleo friendly double chocolate macadamia mini muffins

Ingredients –

2 Tablespoons of cacao

2 Tablespoons of coconut flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon of ground cinnamon

1/2 teaspoon of instant coffee granules

A pinch of salt flakes

2 eggs

1 Tablespoon of warm water

2 Tablespoons of maple syrup

1 Tablespoon of vanilla extract

1 Tablespoon of coconut oil, melted and cooled

1/4 cup macadamia nuts, roughly chopped

2 Tablespoons of roughly chopped dark chocolate

Method –

1 – Preheat oven to 160′C (320′F) and prepare your mini cupcake tray with paper cases or lightly grease and set aside.

2 – Place all ingredients except for the macadamia and choc chips into your blender and process until well combined.

3 – Transfer your super chocolaty muffin mixture into a medium size bowl then add 3/4 of your chopped macadamia nuts and all of your choc chips then stir until just combined.

4 – Spoon batter into your prepared muffin tray then sprinkle each muffin with some of your remaining macadamia nuts.

5 – Bake those bad boys for 8-10 mins until the tops spring back when lightly pressed and a toothpick comes out clean with just a few crumbs attached when inserted into the centre.

6 – Allow your delicious little cupcakes to cool in the tray for 10 mins, then transfer to a wire rack to cool completely.
