And just like that the school holidays are upon us once again!
I am really looking forward to spending a little extra quality time with my little lady but you guys . . . girlfriend has a massive list of stuff she wants to do.
I’m talking massive!
Not only does she have a sweet “little” list but her to-do list is color coded and broken down into days, hours, minutes . . . Although I am seriously proud of her list making ability (no idea where she gets that from 😉 ) but, reading the list is enough to make me wanna take a nap!
Safe to say Ima need a leetle extra help to tackle that holiday to-do list and keep up with my little energizer bunny.

All natural, quick and easy, secretly healthy, dark and delicious, decadent, rich, fudgey, chewy, double chocolate, espresso infused, date free bliss bites!!!!!
You guys . . .
These bliss bites are the bomb!
Not only are they insanely delicious but, they are all natural made from just a handful of real food ingredients with no refined flours or sugars added!
They also happen to be super quick and easy to prepare coming together in one bowl in a mere minutes!
Simply throw your ingredients into a bowl, give it a little stir and you are good to go ♥♥♥
No food processor or blender required!
Here’s what you need to know about these dark and delicious, fudgey, chocolatey, espresso infused bites of deliciousness . . .
They are decadent and rich and just subtly sweet.
They are soft, chewy and seriously fudgey with subtle crunch thanks to those delicious chunks of dark chocolate and those cheeky little chia seeds.
They are seriously, and I mean seriously, chocolatey with a nice little hit of espresso.
When I say these bliss bites are seriously chocolatey I mean it you guys, these babies are intense! Dark, delicious and seriously rich! If you prefer your bliss bites on the sweeter side you might want to add a little extra vanilla or maple syrup or even a touch of stevia. Feel free to play around and adjust the sweetness to your own personal taste. But for me, the darker/richer the better #justsayin
And just when you think they couldn’t get any better, because coffee + chocolate = absolute awesomeness, wait for it, wait for it – they also happen to be secretly healthy and loaded with nutritional value.
Our dark and delicious, double chocolate espresso infused bliss bites are high in calcium, iron, magnesium, and B vitamins. They are rich in antioxidants, packed with protein, heart healthy fats, amino acids and those all important omega 3’s. Talk about packing a nutritional punch!
The perfect pick me up for any time of day!
FYI – I also feel like I should mention that, when I make my bliss bites I tend to make them way smaller than the ones you see in stores or cafes. I prefer to make them on the smaller side because I like being able to just pop one in my mouth on the down low so I don’t have to share I can go about my business. I would say you would probably need 3 of my bliss bites to make up the size of one of those store bought/cafe size golf bites. Feel free make them whatever size that tickles your fancy, just wanted to put that out there 🙂
Serve them simply just as they are in all their dark and delicious, decadent, rich, super fudgey, intensely chocolatey, espresso infused glory;
or feel free to have a little fun . . .
Coat them in some finely shredded coconut for a little extra sweetness and a nice bit of crunch . . .
Or an extra delicious dusting of cacao because extra chocolate is always a good idea . . .
Or, because you know that here in our house we take any opportunity we can to bust out the sprinkles, and these double chocolate espresso infused bliss bites are so delicious they are totally worth celebrating (plus we just got our hands on some of the prettiest sprinkles I have ever seen. You might want bust open a packet of your favorite sprinkles and really get the party started (as if you didn’t see it coming 😉 )

Double Chocolate Espresso Bliss Bites {Date Free}
Makes approx 20 – All natural, seriously healthy, quick and easy, decadent, rich, fudgey, chewy, crispy, crunchy, seriously chocolatey, espresso infused, blissful bites of deliciousness.
Ingredients –1/4 cup of Tahini
2 Tablespoons of maple syrup
2 teaspoons of vanilla extract
1 teaspoon of instant espresso
1/4 cup of finely shredded Desiccated Coconut
1/4 cup of almond meal
1/4 cup of quinoa flakes (I haven’t tried it myself but I think you could sub quick oats if you can’t get or don’t have quinoa flakes)
2 Tablespoons cacao
1 Tablespoon Chia seeds
1 Tablespoon of dark chocolate chips, roughly choppedOptional for serving –
Cacao
Finely shredded coconut
Sprinkles!!!!!!Method –
1 – Place all ingredients into a medium size bowl and stir to combine.
2 – If the mixture is a little dry add some extra water, 1 teaspoon at a time, until it sticks together to form a sticky “dough”
3 – Scoop a small section of dough and shape roll in the palm of your hand to shape into bite size balls, repeat until all the mixture has been used. FYI – I use approx 1 heaping teaspoon per bite which makes them the perfect size for popping into your mouth on the down low so you don’t have to share 😉
4 – If you are going to coat your bliss bites in cacao, coconut or sprinkles simply place your cacao, coconut and/or sprinkles into a small bowl or zip lock bag and gentle press/shake until nicely coated. Store in the fridge until ready to serve.
