Well hey baby, what’s shakin’?!
Me, oh you know . . . not much . . . just hangin’ . . .
I may or may not have been standing here staring at my laptop for what feels like hours trying to think of something fun to share with you . . .
But I got nuthin’ ?!
I think I burned out my brain trying to come up with a suitable title for today’s “recipe”?!
Oh how I wish I was kidding!
Coming up with recipe titles is hard (for me) and if I’m totally honest, sometimes stresses me out more than it should?!
You see, initially, I was going to call this “Banana Sushi” which is why I used chop sticks as a prop in some of the photos but, I was informed that that was a little . . strange and may be slightly off putting for some . . .
So back to the drawing board I went . . .
Finally, I settled on simply stating things as they are . . .
Choc Banana Superfood Snack Bites anyone?!
As far as snacks go it doesn’t get much simpler than this.
These Choc Banana Superfood Snack Bites are so incredible simple to put together I’m not sure I’d even call today’s post a recipe?!
How about we just consider it a little, deliciously simple, snack time inspitation?!
Bananas are peeled and slathered with lashings of chocolate chai spiced almond butter (you could sub any kind of nut butter you have on hand but that chocolate chai spiced almond butter really is divine and you should should just make it already 😉 ) before being sprinkled with crushed pistachios, some finely shredded coconut and a few cheeky chia seeds.
We then simply slice up our fully loaded banana into decadent little bite size pieces and devour enjoy.
So simple but you guys . . . so, SO good!
The natural sweetness from our banana combined with the deliciously indulgent, perfectly spiced, seriously chocolaty chai spiced almond butter is an absolutely winning combination but then when you add the crisp and crunchy lightly salted pistachio crumble, the sweet yet nutty sprinkling of finely shredded coconut and those cheeky little chia seeds – so much deliciousness it may just knock your socks right off!
Not only does it have that seriously satiating salty-sweet thing going on but it also happens to be a texture loves dream. It’s soft and chewy, crisp and crunchy an absolute delight!
And, not only are our fully loaded choc banana superfood snack bites insanely, and I mean INSANELY, delicious but they also pack a serious nutritional punch!
Did you know that –
Bananas are a great dietary source of potassium and research shows that they can help lower blood pressure, and people who regularly consume bananas are at less likely to suffer heart disease?!
Almond Butter is loaded with heart healthy fats and dietary fiber. Not only that but, because almond butter is made up primarily of unsaturated fatty acids these help to improve your blood cholesterol levels which help combat cardiovascular disease, and also provide much needed energy?!
Pistachios –
These pretty little nuts are also a great source of protein and heart healthy fats.
Research shows that regular consumption of pistachios can help lower bad (LDL) cholesterol and increase good (HDL) cholesterol within the blood?!
But the goodness doesn’t stop there, pistachios are also a great source of antioxidants and phyto-chemical such as carotenes and vitamin E along with other polyphenolic antioxidant compounds and research suggests that these compounds may help remove toxic free-radicals from the body, while at the same time protect you from diseases, cancers, and infections?!
Natures own crisp and crunchy delicious little immunity booster right there!

And, (last one, promise) pistachios also contain minerals like copper, manganese, potassium, calcium, iron, magnesium, zinc, and selenium which are required in neuro-transmission (think brain function), metabolism, as well as red blood cell production!
Excuse me while I go grab another handful of pretty little pistachios!!!! So much awesomeness contained in one delicious little nut!
And moving on to coconut . . .
Did you know that coconut is also high in fibre and packed with potassium (FYI – some of the health benefits of potassium include relief from stroke, assist in lowering blood pressure, as well as anxiety and stress disorders. They have also been linked with enhancing muscle strength, and reducing muscle soreness, cramps and spasms!
Also, coconut is naturally high in lauric acid which helps to boost immunity and research shows that people who frequently consume coconut, and coconut oil, are sick less often than those who don’t?!
And last but not least we have those cheeky little chia seeds . . . which not only add a crazy cool textural component to out deliciously simple super snack but they also give you a mega hit of omega 3’s, protein, calcium, fiber, magnesium as well as a good dose of antioxidants.
I told you this was a super snack didn’t I?!
So much goodness all rolled up and sprinkled in to one tasty little moutful.

Choc Banana Superfood Snack Bites
{Vegan, Gluten Free & Paleo Friendly}Makes 1 delicious, nutritious, chocolate covered banana with a crisp and crunchy crumble
Ingredients –
1 Banana
1-2 Tablespoons of chocolate chai spiced almond butter (or nut butter of choice)
1 Tablespoon of crushed pistachios
1 teaspoon of finely shredded coconut
1 teaspoon chia seeds
Method –
1 – Peel your banana
2 – Spread your nut butter over the top of your beautiful banana
3 – Sprinkle over your crushed pistachios, shredded coconut and chia seeds
4 – Using a sharp knife, carefully slice your banana into bite size pieces.
