So I don’t know about you but it seems like almost every other person I talk to lately is either following a Paleo diet, about to start transitioning over to following a Paleo diet or knows someone who has/done/is.
I personally am not one of those people but I am so interested in learning about it.
I figured it’s about time I tested out a Paleo recipe for myself.
I gotta be honest . . . I get so nervous saying that I’m sharing a Paleo recipe. Actually I feel nervous anytime I say a recipe is specific to any special diet, gluten free, vegan . . . I just don’t want to mess it up . . . and embarrass myself in front of all my wonderful invisible internet friends.
Anyways . . . enough of my paranoia . . . when I saw the cool kids over at Paleo Pot sharing this ebook by Scarlett Aphra – Paleo Cookbook for Beginners I couldn’t pass it up (um how awesome is the kindle app by the way?! Lovin’ it #justsayin). So this week for our test it out Tuesday recipe we are making a Scarlett’s Paleo friendly Banana and Walnut Loaf. Not only is it Paleo friendly its all kinds of delicious.
A few notable differences about this loaf – it doesn’t rise like your standard loaf of banana bread and it feels a slightly different in texture, but only when your holding it in your hand. It’s hard to explain . . . but don’t let it put you off, because once you get it into your mouth is incredible, so light, soft, tender and perfectly sweet. The sprinkling of walnuts add a nice, subtle buttery crunch which is to die for – love me a little crunch.
This Banana and Walnut loaf is super tasty all on its own but toasted with a little butter and an extra drizzle of maple syrup . . . I have no words, or photos clearly because well . . . can’t talk eating . . .
Honestly I couldn’t get over how light this loaf was, I’m not sure why but I was expecting it to be heavy and possibly a little dry/crumbly but I couldn’t have been more wrong. This loaf is moist (←sorry), tender and light, perfect with your morning coffee (or green tea).
So . . . if like me, you’re new to the whole Paleo thing but wanting to test out the water this Banana and Walnut loaf is a great (and seriously delicious) place to start. Even my little lady loved this loaf!
Props to Scarlett for putting together such a wonderful, informative and easy to use book (seriously 99c well spent) and to the cool kids at Paleo Pot for bringing it to my attention.
Now, let’s conquer those fears and go make us some super simple but incredibly delicious, Paleo friendly Banana and Walnut loaf.
Banana and Walnut Banana Bread (Paleo)
Slightly adapted from Scarlett Aphra’s Paleo Cookbook for Beginners
Makes 1 loaf, approx 12 slicesIngredients –
3/4 cup almond meal
1/4 cup coconut flour
2 over ripe bananas, mashed
2 eggs
1/4 cup maple syrup
1 Tablespoon of coconut oil, melted and cooled slightly
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1 teaspoon of baking powder
1/2 teaspoon of baking soda
pinch of salt flakes
1/4 cup walnuts, roughly chopped.
Method –
1 – Preheat oven to 175’C (350’F) then line your loaf pan with baking/parchment paper and set aside.
2 – In a large bowl using a fork stir together your mashed banana, eggs, maple syrup, coconut oil and vanilla.
3 – Into your banana batter sift almond meal, coconut flour, baking powder, baking soda, cinnamon and salt then stir until just combined.
4 – Stir through chopped walnuts then pour batter into your prepared loaf tin and bake for 35-40 mins. Until a toothpick comes out clean once inserted into the centre.
5 – Allow to cool in the the loaf pan for 10 mins before transferring to a wire rack to cool completely.
6 – Slice and serve

This is quite possibly the best cake that I have ever had. I made it for Easter and everyone loved it. I made it in 2 round pans and it overflowed so next time I will make a small one for myself in addition to the round cake pans. I put the cakes in the freezer afterwards and it made the cake so moist. This is definitely a keeper!!
