But not just any ol’ snack . . . oh noooooooo

Tell me, how would you like a big ol’ handful of crisp and crunchy, tart and chewy, buttery, sweet, nutrient rich, deliciously indulgent blueberry and cranberry coco-nutty trail mix?!
Um, yes please!!!!!!!
And while we’re at it, please tell me that I am not the only person who lives for loves snacks ?!
I guess you could say I kind of eat like a happy little hobbit . . .
Breakfast, second breakfast, elevenses, lunch, afternoon tea, dinner, dessert, supper . . .
Yep, I’d say that’s a pretty accurate summary of what a typical day of eating would look like for me.
It’s funny how when it comes to snacks people seem to either absolutely love and sorta kinda need them or they’re not interested in them slightest.
Because I’m 100% a part of the team snacks fan club I make a point of always having some kind of healthy snack options on hand, prepped and ready at all times.
But, I do have a couple of non-negotiables when it comes to my all important, much loved snack selection . . .
They have to be quick and easy to prepare – no messing about.
They have to make a decent quantity, enough to get us through at least a week!
They have to be portable and have a long-ish shelf life! Something I can keep in the deep dark depths of my oversized handbag in case of a hangry emergency while I’m out and about because, let’s be honest, no one likes a hangry mama.
And most importantly, they have to be delicious!
Ain’t nobody got time for boring, tasteless snacks!
And let me tell you this deliciously indulgent blueberry and cranberry coco-nutty trail mix totally ticks all the boxes!
It’s super quick and easy to prepare made with just a handful of real food ingredients that I bet you have on hand already.
It comes togehter in one bowl (or even just a giant ziplock bag) in a matter of minutes!
It 100% portable and able to endure the weird and wonderful adventure that is riding around in the bottom of my giant hand bag.
It’s incredibly nutritious, packed with protein and heart healthy fats to help keep you full and satisfied for hours at a time!
It’s rich in antioxidants, which will help give your immune system a nice little boost, thanks to those sweet and chewy dried berries and that decadent little sprinkling of dark chocolate chips (although you could totally sub cacao nibs if you prefer).
And, it also happens to be vegan, gluten free and paleo friendly.
But, most importantly, it’s simply delicious and I just know you’re going to love, love, love it
Deliciously buttery nuts and seeds combined with a handful of sweet and chewy dried berries, some crisp and crunchy shards of oven roasted coconut and the tiniest little sprinkling of dark chocolate adds a touch of decadence that is truly divine!
I think we can all agree that chocolate just makes everything better . . .
And including a little indulgence to our blueberry and cranberry coco-nutty trail mix may have been a stroke of genius on my part, it’s got that seriously satiating, salty-sweet thing going on and I just can not wait for you to try it!
Today’s “recipe” , if you could even call it that, is really pretty basic. I’ve simply thrown together a bunch of my fave nuts along with some oven roasted coconut chips, dried fruit and a cheeky sprinkling of dark chocolate chips you know, for the extra antioxidants of course 😉 , given it a little stir and voila’, done!
Real food, real simple is the name of the game here people!
That being said, one of the things I love about making your own trail mix is that it’s totally customisable so feel free to play with the ratios and/or ingredients and make it just the way you like it just promise me you’ll make it, asap!
Eat it simply by the handful, serve it with some coconut or Greek style yogurt for a delicious, nutritious, quick and easy powerhouse of a breakfast bowl, sprinkle some on your post workout smoothie or enjoy a handful (or 2) after dinner with a nice cup or green tea, a decaf coffee or a nice cup of ho cho and call it dessert.
It’s really is the perfect, anytime snack!

Deliciously Indulgent, Blueberry & Cranberry, Coco-Nutty Trail Mix {Vegan, Gluten Free & Paleo Friendly}
Makes approx 3 1/2 cups of deliciously indulgent, crisp and crunchy, tart and chewy, buttery, sweet, healthy, homemade, blueberry, cranberry, coco-nutty trail mix
Ingredients –
1 cup raw almonds
1/2 cup raw cashews
2 Tablespoons of sunflower seeds
2 Tablespoons of pepitas
1/2 cup oven roasted coconut chips
1/2 cup dried cranberries
1/4 cup dried blueberries
2 Tablespoons of mini dark chocolate chips/cacao nibs (use dairy free if necessary)
Method –
1 – Place all ingredients into a bowl (or large ziplock bag) and stir (or shake) to combine.
2 – Store in an airtight container
