Do you ever have those days, or even just hours where anything and everything that can go wrong does?
Well that was me yesterday!
Somehow I managed to drop a plate, smack bang, on top of my foot. You know that bony arch on top of your foot? Yep, corner (edge?) of a plate smashed square into that. Umm ouch?!
I then managed to spill a bottle of maple syrup all over my kitchen counter/floor! Yep, liquid gold everywhere. So, so sad! I may or may not have cried . . .
And then I set about making my weekly batch of our fave waffles . . . something I have been doing every week for months now. I have made this recipe so many times it’s embedded in my brain. Literally hundreds of light, fluffy waffles have been made, loved and devoured inhaled consumed so you would think this would be an easy task right?!
Wrong!
Well, not this day anyhow.
So . . . out of sheer desperation and the need for an easy win I give you my latest creation . . . Avocado Pesto!!
Smooth and creamy avocado is smashed and blended with your fave zesty, cheesy pesto to make this super simple, seriously delicious pot of gloriously green goodness.
Lazy or genius?
A little of both maybe?!
If you follow along with me on Instagram you may remember that last week I whipped up a batch of our fave {oil free} roasted garlic and walnut pesto using some basil fresh from our very own little little herb garden! So exciting! We have attempted to grown our own little herb garden many times before and it’s always been a massive fail so I figured I’d best take full advantage of this gloriously green, super fresh homegrown basil before I kill it.
I am such a creature of habit every time I have pesto I always have to have avocado with it.
Every. Single. Time!
Something about the smooth, rich, glorious, creaminess of the avocado combined with the zesty, bitty, cheesy pesto just tastes like a dream.
And you can totally just use it as you would regular pesto, stir a heaping spoonful through your fave pasta dish. Spread it on your toast (YUM), dip your veggies in it for the perfect afternoon snack. You can also spoon it over grilled chicken, steak or fish for a simple, healthy dinner winner!
This glorious avocado pesto may be kind of unattractive and difficult to photograph but it is super simple to make and it packs a serious flavour (and nutritional) punch and I know that you will just love it!
Smooth, creamy, zesty, cheesy gloriously green Avocado pesto
Make it, Eat it, Love it
Avocado Pesto
Makes approx 1 cup of creamy, dreamy, zesty, cheesy pestoIngredients –
1/2 cup of your fave pesto (I use our fave simple homemade pesto but store-bought will totally work)
1/2 a ripe avocado
a squeeze of lemon juice
Salt and pepper to taste
Method –
1 – Scoop the flesh from your avocado and place into your blender/food processor and blend until deliciously smooth.
2 – Add your pesto, lemon juice and a pinch of salt and pepper to your avocado puree then blend/process until just combined.
3 – Taste and adjust seasonings to taste and use as you would regular pesto. Spread it on toast, stir through pasta,
eat it by the spoonful, spoon over grilled chicken/steak/fish. Store in a sealed, airtight container in the fridge.

Can I store this in the freezer and defrost for future use?
I haven’t tried it personally but I imagine you could. You may need to give it a good stir/re-blend before you use it though.
