So tell me, how was your weekend?

Mine was good, super busy though! I was running all over town taking our little lady to and from birthday parties . . .
And then, of course, I had my hands full dealing with the post party come down which was all kinds of fun – said no parent ever!
Anyway . . .
I’m hungry, are you hungry?
I hope so because I made you a snack.
How would you like a big ol’ mouthful handful of apple and cranberry {grain free} granola?!
Oh you guys this stuff is so good!
It’s crisp, crunchy and perfectly spiced without being overly sweet.
It’s everything you want in a good granola and it could not be easier to make!
A mix of your favourite nuts and seeds are combined with some apple puree’, a drizzle of coconut oil, a touch of maple syrup, a splash of vanilla and a sprinkling of heart warming cinnamon before being oven roasted until they are deliciously golden and perfectly crisp.
Once that’s done we simply stir through a handful of sweet, juicy and delicious chewy dried cranberries and you’re done!
So simple but oh so good!
I seriously can not wait for you to try it because I know you are going to love it!
Not only is it insanely delicious as well as being super quick and easy to prepare, coming together in less than 30 minutes, start to finish!
But, it also happens to be all natural made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already.
It also happens to be naturally vegan, gluten free and Paleo friendly.
But most importantly it’s insanely delicious and you need it in your life like, yesterday!

I gave my dad some of this apple and cranberry granola to try, FYI – my dad is the granola king of our family, and he gave it a very enthusiastic double thumbs up and even went as far as to declaring it to be irresistible and you know what, I’d have to agree – it really is irresistible.
I mean would you just look at those clusters!!!!

Apple and Cranberry {Grain Free} “Granola” – Vegan, Gluten Free & Paleo Friendly
Makes approx 3 cups of all natural, delicious, nutritious, crisp and crunchy, subtly sweet, cinnamon spiked apple and cranberry {grain free} granola.
Ingredients –
3/4 cup raw almonds, roughly chopped
1/2 cup raw cashews, roughly chopped
1/4 cup pistachios, roughly chopped
1/4 cup Sunflower seeds
1/4 cup pepitas/pumpkin seeds
1 Tablespoon of chia seeds
2 Tablespoons of Apple Puree
1 Tablespoon of coconut oil, melted and cooled
2 Tablespoon maple syrup
1 Tablespoon vanilla
1 teaspoon cinnamon
a pinch of salt
1/2 cup dried cranberries
Method –
1 – Preheat your oven to 150’C (300’F) – Line a rimmed baking sheet with baking/parchment paper and set aside.
2 – Roughly chop your almonds, cashews and pistachios – Go easy though, you want there to be some larger pieces, even a few nuts left intact for some nice contrast in texture.
3 – Place your crushed/chopped nuts into a medium size bowl.
4 – Add sunflower seeds, pepitas, chia seeds and cinnamon and stir to combine.
5 – In a small bowl or jug whisk together maple syrup, coconut oil, apple puree and vanilla then pour over your nut/seed mix. Stir to combine.
6 – Pour your maple-vanilla-apple coated nut mix into one even layer onto your prepared baking sheet and bake for 15-20 minutes stirring occasionally. Keep an eye on it as like any granola recipe, these nuts can catch and burn quickly if left unattended especially when it comes to the final 5 minutes.
7 – Once your “granola” is deliciously golden and no longer “sticky” remove from the oven and allow to cool on the baking sheet for 5 minutes.
8 – Add your cranberries and stir to combine then allow to cool completely on the baking sheet before transferring
by the handful directly into your mouthto an airtight container (or ziplock bag) and store in the pantry.
