We have been home now for just over a week and you know what . . . I kinda feel like I’ve lost my mojo . . .
I was out of my kitchen for almost 3 weeks and I gotta be honest here, I’m finding it hard to get the motivation to cook.
Or when I do I get excited to test out a new recipe and it turns out to be an epic fail
You guy’s I think I’ve lost my groove. I just can’t seem to get myself together. It’s really annoying! I want to make and photograph and share so many delicious things with my sweet invisible internet friends but it’s just not happening! I can’t seem to get myself together?!
And now I’m sick which is not helping things at all, I mean come on now, ain’t nobody got time for that!
With my being sick you know it means it’s time to bust out the roasted garlic.
I am seriously in love with this stuff. Smoky, sweet and all kinds of delicious and when I’m sick I add it to all of the things! Smashed into some avocado on toast = amazing! Whipped into a creamy, dreamy smoky sweet oblivion with this creamy roasted garlic whipped cauliflower and topped with a load of freshly ground black pepper = dinner winning!
But, let me introduce you to my new fave way to get my roasted garlic on – Roasted Garlic and Red Pepper Hummus
Oh my deliciousness you guys this stuff is incredible (even if I do say so myself).
This roasted garlic and red pepper hummus light and creamy, smoky sweet with a subtle kick of heat and I can not get enough!
It’s just so, so good. I’m talking dive head first into the bowl and eat your way out good!
Eat it straight up with your finger a spoon, or as an insanely delicious mid morning snack with some of your fave veggies for dippin’, spread on on a wrap with some salad for one insanely delicious lunch, or have a big ol’ dollop along side some grilled chicken or steak for dinner and you, sweet invisible internet friend of mine will love, love, love!!
Not only is this roasted garlic and red pepper hummus all kinds of delicious it also happens to be all natural and seriously healthy!
We all know that garlic is like a super food. Packed with antioxidants, and vitamin C to help to give your immune system a nice little boost.
But, did you know that garlic is also known to be a natural anti-inflammatory as well as having the benefits of being both anti-bacterial and anti-viral?! Well you do now 😉
And . . . did you know that chickpeas are high in protein?
They also happen to be an incredible source of iron, folate and dietary fibre!
All true baby! All 100 – delicious – % true!
All natural, seriously healthy, light, creamy, smoky, sweet roasted garlic and red pepper hummus that’s ready in minutes! Yes, yes just yes!
So much flavour so little effort,
Make it, eat it, lurve it
Roasted Garlic and Red Pepper Hummus
Makes approx 1 heaping cup of subtly spicy, smoky, sweet, seriously addictive creamy dream red pepper hummusIngredients –
1 x 400g can of chickpeas drained and rinsed (totally optional but I always remove the outer “skins” of the chickpeas, I find you get a smoother, creamy hummus that way. Totally worth it #justsayin)
2 x chargrilled red peppers – (I use these Whole, peeled, Fire Roasted Peppers by Always Fresh ♥ )
4 cloves of roasted garlic
1 Tablespoon sesame seeds
1 small red chilli
Juice of 1/2 a lemon
Salt and pepper to taste
Method –
1 – Place all ingredients into your blender /food processor and process until smooth and creamy.
