Trick or Treat?!
How about BOTH!
You guys, I did a thing . . . actually, I did a couple of things!
1 – I made cookies!!!!!
2 – I made cookies without eggs (or flour) of any kind!
No regular egg, no fancy flax or chia egg, not a single egg in sight!
And;
3 – I put pumpkin in our cookies and it may just be one the greatest things I have ever done!
Soo many tricks happening in these tasty, tasty treats!
You guys, these cookies . . . oh how I adore them!
Crisp and crunchy (but not to crunchy), deliciously buttery, seriously chocolaty, perfectly spiced and simply divine!
Honestly, if a cookie could be my spirit animal I’m pretty sure this would be it!!
Ahhhhhh I am beyond excited to share this recipe with you today because these cookies . . . they’re EVERYTHING!!!!!!!
Everything I love in life all served up in one delicious little mouthful!
Now, for those of you who may be freaking out a little about having pumpkin in your cookies please, please, please hear me when I say they do not taste pumpkin-y (yes that’s a real word, because I say it is 😉 ) at all!
The pumpkin just adds a hint of sweetness, and a touch of moisture that takes the texture of these babies to a whole new level!
On the outside they are light and crisp with the perfect amount of crunch but then when you bite in they are melt in the mouth buttery smooth and just all kinds of incredible!
That subtle sweetness from the pumpkin combined with a splash of vanilla, the richness of cacao and that heart and belly warming hum of our healthy, homemade pumpkin spice mix (which is a combination of cinnamon, ginger, all spice, nutmeg, cloves & cardamon – it’s pretty much Christmas in a cup ) . . . really is a match made in heaven!
There’s something about that combination of spices that warms be down to the depths of my soul.
One bite and you’ll think Christmas has come early and if you ask me, it really has and it’s done so in the form of these dark and deliciously flourless dark chocolate pumpkin spiced cookies!
Be still my heart!

And just when you thought you couldn’t love them anymore . . . they come together in one bowl, with one spoon, no whisking, chilling, kneading or cutting required, and bake up to delicious, devour-able perfection in just 8-10 short minutes!!!!
Everybody got time for that!!!!!

All natural, quick and easy, subtly sweet, seriously chocolaty, perfectly spiced, crisp and crunchy, deliciously buttery, secretly healthy, flourless dark chocolate cookies . . .
1 bowl, 10 minutes, stop what you’re doing, this needs to happen NOW!
Make them. Eat them. Love, love, love them!
Flourless Pumpkin Spiced Dark Chocolate Cookies
- Cook Time: 15mins
- Persons: 8-10
- Difficulty: Easy
- Ingredients
- 1 C Almond butter (or nut/seed butter of choice)
- 1/4 C pumpkin puree
- 1 tsp vanilla
- 2 Tbsp cacao
- 2 tsp pumpkin spice mix
- 3 Tbsp monk fruit sweetener (or 1/4 C of coconut sugar)
- 1 tsp instant espresso – optional this really helps enhance the richness of the chocolate
- 1/2 tspbaking powder
- A pinch of salt
- Dark chocolate , melted for drizzling
- Instructions
- Pre-heat oven to 175’C/350’F
- Line a baking sheet with baking/parchment paper and set aside.
- Place all ingredients apart from the chocolate into a medium size bowl and stir until well combined.
- Use a cookie scoop or spoon to place a small portion of cookie dough onto your prepare baking sheet. Then use your hands and roll into balls and use a fork to gently press downNote – If you want a thinner, crispier cookie then feel free to press them out nice and flat.
- Repeat until all the mixture has been used.
- Once you have all your cookies shaped bake for 8-10 minutes until the tops are just set and the edges are slightly crisp. DO NOT OVER BAKE!!Note – they will firm up as they cool so pls be careful not to over-bake.
- Drizzle with melted chocolate & finish with a sprinkling of pink salt.
