Alright party people, we be keepin’ things all kinds of simple but insanely delicious up in here today because –
1 – it was ridiculously hot this past weekend, so hot I can hardly think straight and –

Today sweet, invisible internet friend of mine, we are going to make ourselves a nice tall, ice cold, family friendly pina colada.

Ice cold, light, fresh, subtly sweet, nutrient rich, insanely delicious and seriously refreshing, just what we all need after a few weeks of festive indulgence am I right?
Yes, yes, just yes!
Our delicious little pina colada is sweetened naturally with a seriously refreshing combination of frozen banana, pineapple and mango with a tropical splash coconut water and a cheeky little 1/2 teaspoon of rum extract thrown in for good measure (feel free to sub for vanilla extract if prefer or, you could make yourself an adult version and use an actual shot of rum – up to you baby )
Perfect for breakfast on the go.
Perfect for your pre/post workout power up.
Perfect for a mid morning/late afternoon pick me up or,
The perfect little after dinner indulgence.
Or the perfect way to cool you down on those can-razy hot summer days!
This smoothie is pretty much sunshine and happiness all served up in one delicious little cup with a cherry on top because well, why not?!
It also happens to be vegan, dairy free and paleo friendly so everybody wins!

Pina Colada Smoothie {Vegan, Dairy Free & Paleo Friendly}
Makes 1 very large, 2 medium or 4 small all natural, light, fresh, subtly sweet, vegan, dairy free and paleo friendly, tropical smoothiesIngredients –
1 cup of unsweetened vanilla almond milk (I use Blue Diamond – Almond Breeze)
1/2 cup coconut water
1/2 teaspoon of rum extract (*optional – could sub vanilla or a real shot of rum should your pretty little heart desire)
1/2 a manky overripe banana (preferably pre-sliced and frozen)
1/2 cup pineapple chunks
1/2 cup mango chunks
1/2 – 1 cup of ice
Optional but recommended for serving –
Maraschino cherries
Finely shredded coconut
Method –
1 – Place all ingredients (except for the shredded coconut and cherries) into a blender and process until smooth and creamy.
2 – Taste and adjust sweetness to suit your personal taste – add a splash of vanilla, some stevia or maple syrup if you prefer a sweeter smoothie.
3 – To serve, pour into a chilled glass or mason jar, add your coconut and cherries and
skull, skull, skullsavour every delicious drop.
