Oh you guys I am so sorry, I have been totally MIA I know but, it really wasn’t my fault.
My laptop all of a sudden decided it was full and refused to do anything for me.
Ok so maybe it was a little bit my fault . . . but in my defence, it didn’t give me any warning, all of a sudden – bam – start up disc is full – no work for you!
It took me over a week to get it sorted out and now that it’s up and running again (although not nearly as well as I’d like and for who knows how long?!) I am so over looking at it, I kinda just want to throw it out the window. Not even kidding, I can barely bring myself to sit and write.
But you guys . . . you need this banana bread in your life . . . like yesterday . . . although I couldn’t get it together share it with you until now so, here we are . . . better late than never right?!
What do you say, can you forgive me?
I come bearing a double dose of chocolate . . .
How about I make us a nice cup of (strong) coffee (or tea if you prefer) and serve you a big ol’ slice of this dark and delicious, decadent, rich, secretly healthy double chocolate banana bread to make it up to you?

You are going to love, love, love this banana bread. Seriously, so much love I can not even tell you.
Subtly sweet, secretly healthy, melt in your mouth banana bread that delivers a double dose of antioxidant rich, choclatey goodness firstly from that dark chocolate cacao and then those dreamy chunks of dark and delicious chocolate chips . . .
It also happens to be all natural made with no refined flours or sugars. Sweetened naturally with our manky, over-ripe bananas, a splash of vanilla, a drizzle of maple syrup.
Oh and It also happens to be low carb, grain free and paleo friendly ♥♥♥
But most importably it is down right delicious.
Im talking so delicious you will want to hide it in the back of your fridge so you don’t have to share because I tell you now, the whole family is going to want in on this.
I mean seriously, just look at it . . . so moist (← sorry), so chocolatey, so, so good!
That genius combination of almond and coconut flour not only gives this decadent little loaf of double chocolate deliciousness a subtle hint of nuttiness but, it also brings the most divine texture. It’s hearty yet light, it literally just melts in your mouth.

I just love the way the almond flour balances out the natural sweetness of this banana bread. Especially how you still get some little flecks of that nutty deliciousness scattered throughout – dark and delicious double chocolate banana bread which is decadent and rich without being overly sweet.
Yes, yes, just yes!
Sweet enough to pass for dessert but healthy enough to enjoy for breakfast. Ummm I don’t know about you but, chocolate for breakfast . . . ahhh – yes please!
And speaking of breakfast . . .
Now, I’m not saying that you should but . . . I kinda, sorta, strongly advise that you do . . .
Get yourself a heaping spoonful of almond butter (or your current fave nut butter) and spread it on nice and thick . . .
Then go ahead and top that deliciousness with fresh strawberry and banana slices . . .
And finish it off with a teeny, tiny sprinkling of roughly chopped dark chocolate you know, just because you can . . .
Then bite on in and lose yourself the the edible perfection you just created . . .
I warn you now, do not leave your banana bread unattended or turn your back on it for a single second because if you do, you are sure to lose it . . . little hands are lightning fast and will swoop in and steal your delicious banana bread from right under your nose!
But seriously it’s so good, I can’t blame her . . .

Double Chocolate Banana Bread {Low Carb, Grain Free & Paleo Friendly}
Makes 4 x (approx 6 x 13 inch) secretly healthy, super cute, subtly sweet, decadent, rich, dark and delicious melt in the mouth, paleo friendly mini loaves of insanely delicious double chocolate banana bread . Or 1 large loaf 🙂Ingredients –
2 manky over-ripe bananas, mashed
3 eggs
1 teaspoon of vanilla extract
2 Tablespoons of maple syrup
1/3 cup coconut oil, melted and cooled
4 Tablespoons of warm water
4 Tablespoons of almond meal
4 Tablespoons of coconut flour
2 Tablespoons of cacao (or unsweetened cocoa powder)
1 teaspoon of instant espresso (optional)
1/2 teaspoon of ground cinnamon
1 teaspoon of baking soda
a pinch of salt
2 scoops of Vital proteins unflavored collagen peptides optional for an extra does of protein and gut healing goodness
2 Tablespoons of dark chocolate chips, roughly chopped
Optional but recommended for serving –
Strawberries, sliced
Bananas, sliced
Dark chocolate chips, finely chopped
Method –
1 – Preheat your oven to 160’C (320’F) – line your mini loaf pans with baking/parchment paper and set aside.FYI – Mine were approx 6 x 13 inches each
2 – Place your mashed bananas into a large bowl and add your eggs, coconut oil, vanilla, water and maple syrup and whisk until well combined.
3 – Add your almond meal, coconut flour, cacao, espresso, cinnamon, baking soda and salt and stir to combine.
4 – Add your chocolate chips and stir until just combined.
5 – Spoon your batter evenly between your prepared loaf pans and use the back of a spoon to smooth down the tops.
6 – Bake for 10 minutes and then cover with foil and bake for a further 15-20 mins.
until the tops spring back when lightly pressed and a skewer or toothpick has just a few moist crumbs attached then inserted into the centre. If your banana bread is browning more than you’d like but is not quite cooked just pop the foil back on to prevent those precious tops from burning 😉7 – Once cooked, removed from the oven and allow to cool in the loaf pans for 10 mins before transferring to a wire rack to cool completely.
8 – To serve, slice and top with a generous dollop of almond butter, then carefully place on your strawberry and banana slices and finish with a cheeky sprinkling of finely chopped dark chocolate then sit back and savour the magical deliciousness you just created ♥♥♥

Did you perhaps mean 6×3 inch mini pans? I’m making this right now, and all of my batter fit into one 4×8 loaf pan. It smells heavenly 🙂
