Say hello to my deliciously simple garlic and rosemary grilled chicken.

I don’t know about you guys, but in our house we eat a lot of chicken.

A lot!

Not only because its a great source of protein (a 100g serving will give you roughly 30g of protein in one sitting) but, it’s relatively cheap and easy to buy easy to prepare and the ways you can change up and enhance the flavours are limitless!

I know what you’re thinking, poor ol’ chicken breast has a bit of a bad wrap for being boring, dry and tasteless . . . but not on my watch baby!

Watch and learn my friend, watch and learn . . .

Chicken breast is seasoned simply with a generous pinch of salt and pepper then sprinkled with rosemary and crushed garlic before being pan seared and finished with a light, fresh squeeze of zesty lemon.

Deliciously Simple Garlic and Rosemary Chicken {Gluten Free & Paleo Friendly}

Makes approx 2 – 3 serves of All natural, quick and easy, succulent, juicy perfectly seasoned, garlic and rosemary tender, grilled chicken finished with a light, fresh, zesty squeeze of lemon.

Ingredients –

250g (8 ounces)  boneless, skinless chicken breasts (I used 2 large chicken breasts)

3-4 sprigs of fresh rosemary, woody stems removed – leaves roughly chopped – you could sub 1 teaspoon of dried rosemary if you prefer.

2-3 cloves of garlic, minced – more or less to taste. FYI -I used 3 largish cloves – I luuuurrrvvvveeee my garlic

1/4 of a lemon

Salt and pepper to taste

Coconut oil for cooking – could sub olive oil, Ghee or bacon or duck fat if you prefer

Method –

1 – Place chicken onto a piece of parchment paper and give it a little pounding with a rolling pin (or implement of choice) to slightly tenderize, flatten out and ensure a thinner and more uniform thickness overall which will result in a quicker and more even cooking.

2 – Sprinkle salt, pepper, rosemary and garlic over your tenderized chicken and give it a nice little massage to ensure your seasonings are thoroughly and evenly coating your chicken.

3 – Place a large skillet or fry pan over medium heat, add a your coconut (or olive oil/ bacon fat or ghee/cooking oil of choice) and cook chicken for 2-3 minutes each side until cooked through.

4 – Once chicken is cooked, squeeze over your lemon juice and turn once more to coat.

5 – Remove chicken from heat and set aside to rest for 2-3 minutes before serving.

6 – Serve alongside your fave veg or with a simple salad ( like this one I prepared earlier 😉 )

Enjoy xo
