Raise your hand if you, like me, love a good slow cooker recipe?! 🙋🏻🙋🏻🙋🏻

There’s just something about preparing a meal in the slow cooker that kinda makes me feel like I’m winning at life.

Which is kind of funny when you think about it because slow cooker meals really take the least amount of effort to put together?!

I mean, all you have to do is throw everything into the bowl, pop the lid on and turn the dial and you’re pretty much done.

No fancy prep work, no need for frequent stirring, turning or rotating of trays or pesky pre-heating of ovens. Simply throw it in, flick a switch and walk away!

But, at the end of the day when it comes time to serve up and eat, you feel like an absolute rock star and rightly so. Not only did you manage to watch an entire season of Gilmore Girls get on top of the housework, do the grocery shopping, run errands, hit the gym, get the kids to and from school and help with the homework but, you also managed to prepare and epic feast for the entire family to enjoy!

And enjoy it they will!

Let me tell you, one taste of this sweet and saucy, spicy, ginger and jalapeno pulled pork and your rock star status will be confirmed!

No question.

I mean how could it not be?!

Succulent, tender melt in the mouth pork that is slow cooked and shredded with an incredibly flavorful sauce that’s a cross between smoky BBQ and sweet teriyaki . . . it’s smoky and sweet with just a little hit of heat, or a big ol’ punch if you’re feeling fiesty, and it’s seriously and I mean SERIOUSLY delicious!

So much flava flave that you’re pretty little head may very well explode!

Honestly, I don’t know what else to tell you, I’m just so excited for you guys to try this because I know you are going to absolutely love it!

Not only is it super quick and easy to prepare with minimal effort on your part but, it also happens to be all natural made with just a handful of ingredients that I bet you have on hand already as is 100% gluten free and paleo friendly and could easily be made Whole30  compliant (just switch out the maple syrup for a finely chopped date) it’s delicious, nutritious and something the whole family will just adore.

Deliciously winning on so many levels! 🎉🎉🎉

Serve it with a simple salad or over some cauliflower (or regular) rice or load it onto a baked potato (regular or sweet) for a heartier meal. Stuff it into tortillas or crisp and crunchy lettuce wraps for a lighter style lunch or with a a couple of soft boiled or crispy fried eggs and some creamy, dreamy avocado (and maybe side of crispy baby taters) for seriously sensational breakfast.

However you choose to serve it you really can’t go wrong so do yourself a favor and promise me you’ll make it, asap!

Slow Cooker Ginger and Jalapeño Pulled Pork {Gluten Free & Paleo Friendly}

Makes 4-6 serves of all natural, quick and easy, succulent, tender, sweet and spicy, seriously saucy, ginger and jalapeno pulled pork

Ingredients –

500g (1lb) pork tenderloin

For the marinade –

1/4 cup of coconut aminos (sub tamari or soy sauce if you prefer)

1 Tablespoon of maple syrup – or honey or  1 date, very finely chopped for Whole30

1 jalapeño, seeded and finely sliced

1 piece of fresh ginger (about 1cm), peeled and grated

3-4 garlic cloves, minced

1/2-1 teaspoon of salt

1/4-1/2 teaspoon of ground black pepper

Optional –

1 teaspoon of arrowroot (tapioca) flour – could sub cornstarch if not paleo

A squeeze of fresh lime juice

Method –

1 – Season the pork tenderloin with salt and pepper and place into your slow cooker.

2 – Place all marinade ingredients into a small bowl or jug and whisk to combine.

3 – Pour marinade into the slow cooker over your pork and toss to coat.

4 – Cook on low for 6-8 hours or high for 4-6 hours.

5 – Once your pork is cooked, transfer to a plate and cover with foil and allow it to rest for 5-10 minutes.

6 – While your meat is resting, turn the slow cooker down to low and add your arrowroot powder (if using) to that glorious, caramelized, sweet, spicy sauce and stir to combine. This will help the remaining sauce to thicken.

7 – Once your meat has rested, shred it with 2 forks and return it to your now thickened sauce, add a squeeze of lime and stir to combine.
