Hi . . . I made you a brownie . . . because I like you and I’m prrrreeeetttyy sure you like chocolate.

These brownies are seriously chocolatey, seriously fudgey and seriously topped with salty swirls of peanut butter.

Wanna know something else . . . these brownies may very well be one of, if not the healthiest (and most delicious) brownies I have ever tasted.

And what makes them even better . . . if thats even possible at this point . . . you can just whip them up in your blender. No standing, stirring, whisking just measure, blend, pour and bake.

Which I love. Especially when you realise you have forgotten a special occasion . . . like your husbands graduation . . . on said graduation day.

These brownies are intense, which is what you want your brownie to be. So much so I initially cut them into 10 pretty generous size bars but after my first tasting I decided less is more . . . decadent, indulgent (secretly healthy) bite size brownies. Ah-mazing!

So pour yourself a glass of ice cold milk and go make these brownies already

Peanut Butter Swirl Brownies
Inspired by this recipe from Sally’s Baking Addiction
Makes 20 delicious little servings

Ingredients

1/2 cup peanut butter, softened (I used PB2 peanut flour)
2/3 cup plain greek yogurt (I use Chobani 0%)
1/4 cup milk  (I use skim)
1 tsp vanilla
1 tsp instant coffee granules
1 egg
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2/3 cup brown sugar
1/2 cup cocoa powder
1/2 cup rolled oats (not quick oats)

Instructions

  1. Preheat oven to 175’C (350F).
  2. Line a 9 x 13 inch baking tray with parchment paper and set aside
  3. Place all ingredients except peanut butter into a blender and blend until oats are  ground and the batter is well combined. The batter will be very runny, don’t freak out . . . all part of the process baby.
  4. Pour batter into your prepared baking tray.
  5. Drop spoonfuls of your peanut butter randomly over the chocolatey batter and then using a knife or tooth pick carefully swirl it through the batter to make pretty patterns. Careful not to over mix
  6. Bake for 20-25 minutes or until the edges begin to separate themselves from the sides of the pan.
  7. Allow to cool completely in the pan, then slice and enjoy
