I have a confession to make……..I love waffles.

Like I really, REALLY love waffles…..I mean really…..

Most of you who know me will know this fact to be true.

If you don’t believe me check out my anytime waffles or my Healthy high protein waffles…..

I LOVE WAFFLES!!!!!!!!!!!!!!

….and to think that it was just over a year ago that I was fortunate enough to have my first taste….it saddens me to know that I have missed out on so many years of waffle eating….. 🙁

Rest assured that I have been working hard to make up for lost time since that first delicious encounter all those months ago 🙂 🙂

Lately I have found myself on a self imposed mission to find a good chocolate waffle recipe. Not overly indulgent or sickly sweet, something I can eat well….anytime of day. So far this is my current favourite. Crunchy on the outside, soft and fluffy and so, so delicious on the inside. Just as a good waffle should be.

Now some of you may be thinking chocolate waffles for breakfast….Emma, you have lost your mind! What kind of example are you setting for your darling daughter??!!!! To you I say……chocolate waffles for breakfast….why not?? I do what I want!!!! And darling daughter of mine well….. she likes them….what can I say, she is a girl after my own heart 🙂

The chocolate flavour of these waffles is actually quite subtle. Come to think of it they are not even terribly sweet. Perfect if you ask me. If it will make you feel better about eating chocolate waffles for breakfast you can always top them with a little yoghurt (greek or vanilla is good) and some mixed berries. Deeeeelicious! Not to mention healthy right?? Gotta get those all important antioxidants somehow 😉

Chocolate Waffles
Recipe adapted from How Sweet Eats
Makes 10 waffles

Ingredients

2 cups plain flour
2 tsp baking powder
1/4 tsp salt flakes
2 Tbsp sugar
1/4 cup cocoa powder
1 cup milk (I use skim)
1 egg
1 Tbsp butter, softened.
1 tsp vanilla extract

Method –

In a medium bowl sift flour, baking powder, salt, sugar and cocoa powder.

Next add egg,

milk

then butter and vanilla (which i promise you is there even though you can’t really see it) and whisk until just combined.

If the batter is dry add extra milk 1 tablespoon at a time until the mixture is “wet” (it will still be thick though).

Preheat waffle iron and pour approx 1/4 cup of batter for each waffle. Cook according to manufacturers instructions

(for me I know my waffles are done when steam stops coming out the sides of the waffle iron…..just a little FYI…sorry, overshare…)


Place your waffles on a wire rack while you cook the remaining batter if your not serving them immediately. This will make sure they don’t go soggy……no one likes a soggy waffle!!!


Now down to business….time to eat…serve with your favourite toppings…….maple syrup, jam (jelly) or

some yoghurt …

and berries are some of our faves for breakfast


or once the kids have gone to bed you can kick things up a notch but serving as dessert with a big scoop of ice cream and lashings of chocolate topping……..

Oh and FYI – These babies freeze really well so you can just make a big batch then freeze them for future emergencies use. Just pop them in the toaster and you are good to go 🙂
