So I had another run-in with some maky over ripe bananas.

You know how much I love them.

NOT!

Thanks to Jessica from How Sweet Eats I was armed and ready to take them down!

and take them down I did.

This banana snack cake  . . . ummmm wow!

and the whipped cream cheese frosting . . .

I die!

Seriously, go buy some extra bananas and do whatever you can to get them to that manky over ripe stage asap just so you can make this recipe.

Those manky bananas make it super moist and with the subtle sweet hit of cinnamon . . . LOVE!!!!!

This stuff is dangerously delicious.

I did make a few changes to the original recipe so make sure you stop by How Sweet Eats to see it and all the other yummy things Jessica has to share. Girlfriend knows how to serve up some insanely tasty treats.

PS – the bonus of this being a “snack” cake, you can have it any time of day. Which means it’s totally ok to have it for breakfast – with coffee of course.

Banana Snack Cake –
Adapted from this recipe from How Sweet Eats
Serves 9 (ish)

Ingredients –

 

1 large egg
1/3 cup brown sugar
2 teaspoons vanilla extract
3 manky ripe bananas, mashed
1 cup plain flour
1 teaspoon baking powder
1/2 tsp baking soda
3/4 teaspoon cinnamon
1/4 teaspoon salt

For the Frosting –

1/4 cup whipped cream cheese, at room temperature
1 teaspoon vanilla extract
1/4 cup powdered sugar
4 tablespoons whipped cream/dream whip

Method –

Preheat oven to 175’C (350’F)

Peel your manky over ripe bananas and place them in a medium bowl . . .

Give them a good mashing!

Add egg,

vanilla,

and brown sugar and stir until well combined.

Sift flour, baking powder, baking soda, cinnamon and salt into banana batter and stir until just combined.

Pour into prepared baking pan (I used an 8×8) and bake for approx 20-25 mins.

Until golden around the edges and top springs back when lightly pressed. A toothpick should have just a few moist crumbs attached when inserted into the centre.

Allow the cake to cool either in the pan or on a board,

then cut into squares.

While the cake is cooling, prepare your frosting –

Place cream cheese in a medium bowl and whisk for a minute or 2.

Add powdered/icing sugar,

and vanilla and whisk to combine.

Add the whipped cream and carefully and gently fold into the cream cheese mix until just combined.

Try not to eat the entire bowl full with a spoon before you have frosted at least one piece of your banana snack cake.

This will be seriously difficult.

Seriously!

Now my favourite part, tasting time!!!!!

Take a piece of that wonderful banana snack cake . . .

Spread on a good layer of frosting . . .

and enjoy MMmmmmMMMmM divine . . .
