2 – This spicy, roasted garlic and char-grilled red pepper cashew cream, although very difficult to photograph/make look “pretty”, is life and you need it in yours, ASAP!

Although, I don’t think I really need to tell you that do I?!

Not after I posted a sneaky little snap of the first batch I made on Instagram a few weeks ago.

Although it took a little longer than I had originally intended #life (your patience is greatly  appreciate by the way) I am very please to say that at last, at last it’s here at last and, I assure you, it is well and truly worth the wait!

Buttery cashews are blended with a sprinkling of sesame seeds, some gloriously caramelized, oven roasted garlic, smoked paprika, a char-grilled red pepper along with one fiery little chili and a cheeky squeeze of zesty lemon . . .

3 main ingredients, 5 minutes to throw it all together and the ways you can enjoy it are virtually endless!

Eat it simply by the jarful, I mean spoonful, spread it on a burger,  a tortilla, or with some avocado on toast, drizzle it over your fave salad or some poached, soft boiled or crispy fried eggs, or grab a bag of your fave tortilla chips, or some cool crisp carrots and use it as a dip or, even better . . . this + bacon ,I die!!!

Spicy, Roasted Garlic and Char-grilled Red Pepper Cashew Cream
{Vegan, Gluten Free, Dairy Free, Keto, Paleo, Whole30 Friendly}
Makes approx 1 cup of all natural, quick and easy, light and creamy, buttery smooth, seriously dreamy, smoky, sweet, perfectly spiced cashew “cream”

Ingredients –

1 cup of cashews, raw unsalted

1 1/2 cups of boiling water (for soaking your cashews)

1 head of roasted garlic – could sub 1 tsp of garlic powder if you don’t have any roasted garlic on hand and don’t want to make any but, I highly recommend the roasted. That stuff is gold!

1 whole char-grilled red pepper

1 small chili, finely sliced (with or without seeds/more or less to desired level of fieriness)

1 Tablespoon of sesame seeds

1 teaspoon of smoked paprika

1 teaspoon of salt flakes

1/2 teaspoon of ground black pepper

1 teaspoon of freshly squeezed lemon juice

1 teaspoon Gevity RX – natural broth concentrate – gut healing goodness – Use EMMA10OFF to get 10% off xo

1-2 scoops of unflavored collagen  – optional for an extra boost of protein and gut healing goodness

Method –

1 – Place your cashews into a bowl (or jug) and pour enough boiling water to ensure they are completely submerged. They tend to swell up as they absorb the liquid so make sure there is a little wiggle room for them to do their thang. Set aside for 20 minutes

2 – Drain and rinse you cashews then place them, along with all remaining ingredients into your blender or food processor and process until creamy, dreamy and well combined.

3 – Taste and adjust seasonings accordingly, add some extra garlic or salt pepper as you wish. Feel free to add a splash of water to reach your desired consistency (I don’t add any, I like to keep mine super thick and thin it out as needed – depending on how I want to use it) and FYI – your cheese will firm up as it cools.

4 – Store in a sealed, air tight container in the fridge until ready to serve, it should keep well for up to 7 days but I seriously doubt it will last that long.

5 – Eat it on all of the things!
