Sorry about the lameness of the joke but, you guys, it’s true . . .

Can’t stop, won’t stop putting eggs on things!

Or should I say in things?!

Either way, I can’t stop!

It’s just so good!

I’m not exactly sure where the idea/obsession came from but I tell you something, I sure ain’t hating it (← obvs)

It doesn’t seem to matter what it is, it just works.

Eggs just make everything better – fact!

Plus, they are seriously good for you – packed with protein, vitamins and minerals, they really are one of natures super foods, so let’s go with it shall we?!

One taste of this deliciousness and I knew I had to re-create it asap because;

1 – It was seriously so delicious that I simply wanted more and,

2 – Sharing is caring and you guys need in on this, asap!

This is the kind of food I just adore, it’s quick and easy to prepare, packed with flavor, doesn’t cost a fortune and is loaded with nutritional value.

Plus did I mention the fact that it’s just down right delicious?!

Because it seriously is!

A perfectly cooked egg nestled within a soft and tender baked sweet potato finished with a sprinkling of salty feta, some fresh coriander and a cheeky splash of hot sauce.

I mean, really . . . does it get any better?!

Simple, delicious, edible perfection.

And you know what else I love, love, love about this “recipe”, it’s the perfect any time meal or snack. No question.

It’s perfect for breakfast, perfect for lunch, serve it alongside some of your fave greens or a simple salad and it’s perfect for dinner too.

Packed with protein, healthy fats and slow release/low GI carbs it also makes a perfect post workout snack.

Seriously there is just so much to love about this incredibly simple, nutrient rich, raft of deliciousness!

Enough chit chat, here’s how you make it –

Simply slice the top off you’re soft and tender baked sweet potato, scoop out a little of the middle, just enough to make room for your egg.

Crack your egg into a small bowl or jug and carefully pour into the delicious little moat you just created in your sweet little potato, then pop it in the oven and bake for 8-10 mins until the egg is cooked to your liking.

For those of you who like a super runny yolk I suggest you keep the the yolk aside until the egg white is almost set and then add the yolk for the final minute of cooking time. That way you are guaranteed a soft and creamy,  deliciously buttery, runny egg yolk.

Once that’s done simply crumble over some feta, sprinkle with some fresh coriander, add a dash of hot sauce and a generous pinch of freshly ground black pepper.

Sweet Potato Egg Boats

Makes 1 quick and easy, sweet and spicy, hearty, healthy raft of deliciousness

Ingredients –

1 medium sized sweet potato, baked

1 egg

1 Tablespoon of Feta Cheese – opt if you can tolerate dairy

1 Tablespoon of Fresh coriander (cilantro)

A dash of your fave hot sauce – I use Siete foods Smoked Chipotle hot sauce  ♥

Method –

1 – Preheat your oven to 175’C (350’F) line a baking tray with baking/parchment paper and set aside.

If you haven’t done so already, first you will need to cook your sweet potato by your preferred method – I simply pierce the outside with a fork a few times, season with salt and pepper and place on a baking tray line with foil or baking/parchment paper and bake at 175’C (350’F) for 30-40 mins until tender. Cooking time will vary depending on the size of your potato. You could just do it in the microwave in a pinch but I much prefer the oven baked it just tastes soooo much better.

2 – Once you have you cooked sweet potato, slice a little off the top and scoop out enough flesh to make room for your egg and place onto your prepared baking sheet. You can either eat the filling as a chef snack or set it aside to serve with another meal.

3 – Crack your egg and carefully pour into the cavity you just created in the center of your sweet potato then place into the oven for 8-10 mins until the egg is cooked to your liking.
