How was your weekend?

Did you do anything fun and festive to celebrate Halloween?

Me, I didn’t really do much.

Halloween is not much of a big deal over here in Australia (yet) so, we didn’t dress up and we didn’t go trick or treating but, we did enjoy a festive breakfast made some fun treats and Halloween themed snacks and watched ourselves some scary movies. Well I watched scary movies, not the little lady . . .

Ahhh good times!

And, as far as recipes go it doesn’t get much simpler than this . . .

First we bake our potatoes . . . next we shred up some chicken (any kind you like, breast, thigh or you could even use a store bought/rotisserie chicken – it’s all good),

Next we simply stir in some BBQ sauce,

add a chili (or two if your feeling feisty) then finish things off some cool, crisp purple cabbage and some creamy, dreamy avocado cream which although it does sound kind of fancy really is nothing more than avocado that’s been blended with some salt, pepper and a cheeky squeeze of lime!

Seriously you guys, this is one of those meals that is so ridiculously easy to throw together yet is packed with so much flavor that your pretty little head may very well explode!

Perfect for lunch, perfect for dinner and if you decided to go ahead and put an egg on it and call it breakfast I wouldn’t be mad about it.

Actually, maybe I would but only because, until now, it hadn’t occurred to me to do that!

BBQ Chicken & Green Chili Baked Potatoes {Gluten Free & Paleo Friendly}

Makes 4 fully deliciously simple, seriously saucy, incredibly flavorful BBQ chicken green chili loaded baked potatoes

Ingredients –

4 potatoes – I used regular white potatoes but you could use sweet orange/kumara or white if you prefer

2 cups cooked chicken, shredded

1/2 cup BBQ sauce – I use my healthy homemade Asian style BBQ sauce but any kind will work so feel free to sub your fave but, I highly recommend my homemade version it’s super easy to make and 100% worth it!)

1-2 green chilies, finely sliced – more or less to taste/with or without seeds depending on how feisty you’re feeling

Salt and pepper to taste

For the avocado cream –

1/2 large avocado

1 Tablespoon of coconut yogurt (could sub coconut cream, primal kitchen foods mayo – yogurt or milk of choice)

A squeeze of lime

Salt and pepper to taste

1 scoop of Vital proteins unflavored collagen peptides – optional for an extra dose of protein and gut healing goodness

For serving –

1/2 cup red cabbage, finely grated

Fresh coriander (cilantro)

Method –

1 – First we want to cook those golden delicious potatoes, you can do this however you prefer I like to do mine in the oven that way they are nice and crispy on the outside but light and fluffy on the inside. You could totally just do them in the microwave if you prefer it’s totally up to you. Do what you feel, just get those babies cooked!

If cooking in the oven simply pierce them a few times with a fork, toss in a little coconut oil, season with salt and pepper and pop them on a baking sheet lined with baking paper or foil and roast those babies at 175’C (350’F)  for 30-40 minutes (this may vary depending on their size) until they are deliciously golden and crisp cooked through. You can test this by gently squeezing them with your fingers (careful, they’re hot!) or test with a knife, fork or even just a toothpick.

2 – Once cooked, remove from the oven and carefully slice each potato in half then use a fork to press down in the center to flatten them out a little, you want to slightly fluff/mash up a little of the filling as you go. This helps to make a larger surface area for us to pile on our tasty, tasty toppings. Set aside.

3 – Place your shredded chicken, BBQ sauce and chili into a small bowl along with a good pinch of salt and pepper and stir until well combined.

4 – Spoon a generous serving of your spicy BBQ chicken filling (I’m talking a good 1/2 cup per potato) onto each of your perfectly cooked potatoes, then top with a handful of your shredded purple cabbage, a couple of extra chilies then add a nice drizzle of our avocado cream and maybe some extra BBQ sauce and finish things off with a a sprinkling of coriander (cilantro).
